Rice and Thai Food

For Thai food, rice is the staple diet. It produces carbohydrates such as energy for the body. Rice also contains many vitamins and minerals. Rice comes in many forms. There are long and short grain rice and color is also different. It can be white, brown, red or black. Plain rice is eaten mostly in central and southern Thailand. In glutinous or "sticky" rice is very popular in northern and northeastern part of Thailand. However, sticky rice is mainly used for snacks and confectionery in Thaifood.

PLAIN rice (long grain): To cook plain rice for each measure of rice you put two measures of water into the pan and bring water to a boil. Boil water until rice is soft outside but still hard in the center for about 10-15 minutes. Time will vary depending on how much rice is cooked. Put the lid on the pan, turn the heat right down and let the rice cook until water is evaporated for about 5-10 minutes. If the rice on top is well cooked, then all the rice in the pan will cook as well. After all the water has evaporated must take care not to burn the rice at the bottom of the pan.

Sticky or glutinous rice (short grain): Sticky rice is different from the usual grain of rice and rice is eaten mainly in northern and northeastern part of Thailand. Sticky rice must be soaked in water for at least 3 hours and at night before you boil.

Noodles and Thai Food

There are many different types of noodles and many different sizes. They come in fresh and dried forms and are made from rice, wheat or mung beans. If possible, we recommend that you use fresh noodles. A yellow or egg noodles are yellow, because egg yolks are added and they are used for noodle coup. Noodles are used in stir-Naruto, soups and salads.

If using dried noodles then they must be soaked in water for 15-20 minutes before using. They are ready to stir-fried. If they must be used for noodle soup, they must be placed in hot soup for about 2 minutes. Fresh noodles do not need to be watered and can be placed directly into the soup. If needed quickly then dried noodles can be placed in boiling water for 3-5 minutes and then they are soft they are transferred into the cold water and then they are ready to be used.

Rice vermicelli, which must be deep fried for a crispy noodle dish does not need to be watered. They can only be fried in hot oil.

Bean vermicelli or glass noodles are made from mung beans. They should be soaked in water for 5 minutes before using. If they will be used for salad, then they must be placed in boiling water, after being watered and then transferred to cold water.

Lemon Chicken Soup - A Columbus, OH Greek Food I like

As a child living at home in Greece, I always remember the rainy winters. Our house had no heat so we relied on warm clothing in the house and eat lots of soups, one of the most popular are the lemon chicken soup, also known as soup Avgolemono. Coincidentally my godmother, who lived on the street, there were several lemon trees and a fence that we had to jump over to pick them up regularly before they got very cold!
