There are many different types of noodles and many different sizes. They come in fresh and dried forms and are made from rice, wheat or mung beans. If possible, we recommend that you use fresh noodles. A yellow or egg noodles are yellow, because egg yolks are added and they are used for noodle coup. Noodles are used in stir-Naruto, soups and salads.
If using dried noodles then they must be soaked in water for 15-20 minutes before using. They are ready to stir-fried. If they must be used for noodle soup, they must be placed in hot soup for about 2 minutes. Fresh noodles do not need to be watered and can be placed directly into the soup. If needed quickly then dried noodles can be placed in boiling water for 3-5 minutes and then they are soft they are transferred into the cold water and then they are ready to be used.
Rice vermicelli, which must be deep fried for a crispy noodle dish does not need to be watered. They can only be fried in hot oil.
Bean vermicelli or glass noodles are made from mung beans. They should be soaked in water for 5 minutes before using. If they will be used for salad, then they must be placed in boiling water, after being watered and then transferred to cold water.
